Our Easter Sunday was fun and calm and simple. We had family time. We ate good food.
We walked to the park that has Lucy's favorite swings. It is a mile away, but she loves to swing. We go almost everyday now that it isn't snowing anymore. She slouches way down in the swing when it is time to leave, to make it hard to pick her up. Adorable.
Now that I think about it, I spent a good amount of the day cooking, but it was broken up through the day. I made pot roast. I never ever cook beef, so I pretty much had no idea what I was doing. Michael was happy about it, which is all I really cared about. In the morning I pan seared it - - the organic, local, grass fed roast. Then I threw into the crock pot, using this recipe. Easy. Michael made breakfast for us while I did that. Dutch babies with strawberries...
During nap time I made the deviled eggs, an essential Easter dish... I mean, we had to do something with the eggs we dyed. We used "natural" dyes this year, which gave us good earthy looking eggs. It was a nice change and we had fun because we weren't sure if it was going to work or not! Feast your eyes on our masterpieces (and what they were dyed with)....
The beet stained eggs were completely purple, right down to the edge of the yolk.

The park was packed by the way. Apparently when the weather starts to get decent again, the barely dressed college students flock to parks. Luckily, they find it difficult to use the baby swings.
